El pimiento y tomate en dados levemente m\u00e1s grandes<\/li>\n\n\n\n<li>A\u00f1adir el ajo a la sart\u00e9n y dejar dorar a fuego medio<\/li>\n\n\n\n<li>Agregar la cebolla y esperar a que poche<\/li>\n\n\n\n<li>Incorporar el pimiento y esperar unos 5 minutos hasta que se cocine un poco<\/li>\n\n\n\n<li>A\u00f1adir dos cucharadas de tomate frito<\/li>\n\n\n\n<li>Tras 3 o 4 minutos, agregar el tomate troceado y dejar a fuego bajo 10 minutos<\/li>\n\n\n\n<li>A\u00f1adir sal y pimenton dulce<\/li>\n\n\n\n<li>Incluir los dos huevos encima sin remover, ponerle la tapa y esperar a que me resulta muy recomfortante. Al aplicar la t\u00e9cnica de corte de brunoise, se permite que la superficie de contacto de las verduras sea mayor y haya una caramelizaci\u00f3n uniforme, libreando una gran cantidad de compuestos arom\u00e1ticos. Nutricionalmente hablando es un plato muy completo, en el que encontramos vitaminas y minerales de las verduras y prote\u00ednas de alto valor biol\u00f3gico. Y como el ritual manda comerlo con pan, cerramos el c\u00edrculo con los hidratos de carbono del cereal. Me ha encantado el detalle del corte en brunoise. Normalmente la gente corta la verdura de cualquier manera, pero se nota much\u00edsimo en la textura final; el sofrito casi se funde con el tomate. Le puse un poco de piment\u00f3n de la Vera ahumado y el olor al destapar la sart\u00e9n era de otro planeta.\u00bb<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Comensal 2<\/strong>: \u00abMe has salvado la cena. Es la receta perfecta para cuando no tienes nada en la nevera pero te apetece comer algo que no sea pasta con bote de tomate. Por menos de 2 euros he comido como en casa de mi abuela. \u00a1El truco de tapar la sart\u00e9n para que el huevo se haga con el vapor es clave!\u00bb<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Comensal 3<\/strong>: \u00abHac\u00eda tiempo que no probaba un sofrito tan bien hecho. Me recuerda mucho a los huevos al plato que se hac\u00edan antes, donde lo importante era el cari\u00f1o que le dabas a la verdura.
