Course Description
This course is designed to the provide participants with an introduction to the rich culture, history and gastronomy of Spain, in the privileged setting of the city of Seville.
Goals
- Understand how these contents can be incorporated into educational settings to promote intercultural learning.

Examine the major cultures of the Iberian Peninsula and their interactions, focusing on how they shaped art, religion, and gastronomy.

Evaluate Seville’s role in European expansion and discuss the cultural and culinary exchanges between Europe and the Americas.

Experience and interpret cultural heritage through practice, using activities such as oil tasting and a tapas tour to connect historical gastronomic traditions with their contemporary expressions in Seville.

Tentative Schedule
Phoenicians, Celts and Tartessos. Greeks, Carthaginians, and Iberians. Roman rule and influence: art, language, religion. The influence of Roman gastronomy on our modern world
Excursion to Italica (15-20 students), a fascinating ancient Roman city where emperors Trajan and Hadrian traced their origins to. This excursion will give participants insight into how people lived, worked and ate in Roman times
Visit the Antiquarium (less than 15 students), underneath Las Setas, and take a walking tour of the center of Seville to see other Roman and Islamic remains.
Exploration of the rich and at times conflictive period of interaction between Christians, Jews and Muslims in medieval times. Presentation and discussion of the cultural diversity of the period in art, literature, music and gastronomy.
Seville became the port and gate of the Indies for two hundred years. An amazing period which left a lasting impact in the city and the world. In this session participants will engage in some of the debates regarding the European conquest and colonization of the Americas, and explore examples of the rich legacy in both the gastronomy of both worlds.
The oil tasting session will be at the UPO campus. The tapas tour will give participants the chance to try some traditional and modern examples of local cuisine, in the famous old city quarter of Seville.
